Zesty Mediterranean Chex Mix

Ingredients
3 cups Rice Chex
3 cups Corn Chex
1 cup pita chips, coarsely crushed
1 cup roasted almonds
1/2 cup sun-dried tomatoes, chopped
1/2 cup Kalamata olives, sliced
1/4 cup olive oil
1 tablespoon dried oregano
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
Instructions
1. Preheat the oven to 250°F (120°C).
2. In a large mixing bowl, combine Rice Chex, Corn Chex, pita chips, roasted almonds, sun-dried tomatoes, and Kalamata olives.
3. In a small bowl, whisk together olive oil, dried oregano, smoked paprika, garlic powder, cayenne pepper, sea salt, and black pepper.
4. Pour the olive oil mixture over the Chex mixture and toss until evenly coated.
5. Spread the mixture evenly on a baking sheet.
6. Bake for 45 minutes, stirring every 15 minutes, until the mix is golden and crisp.
7. Remove from the oven and allow to cool completely before serving.
Storage
Store the Chex Mix in an airtight container at room temperature for up to 1 week.
Reheating
If desired, reheat in a preheated oven at 250°F (120°C) for 5-7 minutes to refresh the crispiness.
