Ingredients

1 lb shrimp, peeled and deveined
2 ripe mangoes, peeled, pitted, and sliced
1 red bell pepper, thinly sliced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1/4 cup lime juice
2 tbsp olive oil
1 tbsp honey
1/2 tsp salt
1/4 tsp black pepper

Instructions

1. In a large bowl, whisk together lime juice, olive oil, honey, salt, and black pepper to make the dressing.
2. Add the shrimp to the bowl and toss to coat them in the dressing.
3. Heat a skillet over medium heat and cook the shrimp for 2-3 minutes on each side until they are pink and opaque.
4. In another bowl, combine the mango slices, red bell pepper, red onion, and cilantro.
5. Add the cooked shrimp to the mango mixture and gently toss everything together.
6. Serve immediately or chill in the refrigerator for up to an hour for enhanced flavors.

Storage
