Ingredients
2 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 cup long-grain white rice
2 cups chicken broth
1 lime, juiced
1 tsp lime zest
1/2 cup fresh cilantro, chopped
1 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add chopped onion and minced garlic, sauté until onion is translucent, about 3 minutes.
3. Stir in the rice, cooking until lightly toasted, approximately 2 minutes.
4. Pour in chicken broth and bring to a simmer.
5. Add lime juice, lime zest, ground cumin, salt, and pepper.
6. Cover and reduce heat to low, cooking for 15-20 minutes or until rice is tender and liquid is absorbed.
7. Remove from heat and fluff with a fork.
8. Stir in fresh cilantro before serving.
