1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1/4 cup whole milk
1/4 cup lemon juice
2 tablespoons lemon zest

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon fresh thyme leaves
1 cup confectioners’ sugar
2 tablespoons lemon juice (for glaze)

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
2. In a large bowl, cream together the granulated sugar and butter until light and fluffy.
3. Beat in the eggs one at a time, then stir in the milk, lemon juice, lemon zest, and vanilla extract.
4. In a separate bowl, whisk together the flour, baking powder, and salt.
5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
6. Fold in the thyme leaves gently.
7. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
