Ingredients

8 oz thin spaghetti
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/4 cup black olives, sliced
1/4 cup fresh parsley, chopped
1/4 cup fresh basil leaves, torn
1/4 cup lemon juice
1/4 cup olive oil
1 tbsp Dijon mustard
1 clove garlic, minced
1 tsp salt
1/2 tsp black pepper
1/4 cup feta cheese, crumbled

Instructions

1. Cook the thin spaghetti according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
2. In a large bowl, combine the cooked spaghetti, cherry tomatoes, cucumber, red onion, black olives, parsley, and basil leaves.
3. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, minced garlic, salt, and black pepper until well combined.
4. Pour the dressing over the spaghetti mixture and toss gently to coat all the ingredients evenly.
5. Sprinkle the crumbled feta cheese over the top and give it one last gentle toss.
6. Serve immediately or refrigerate for 1-2 hours to enhance the flavors before serving.

Store in an airtight container in the refrigerator for up to 3 days.
