Zesty Lemon Herb Pasta Salad

Ingredients

8 oz elbow macaroni
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red onion, finely chopped
1/4 cup black olives, sliced
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
1/4 cup feta cheese, crumbled
1/3 cup extra virgin olive oil
1/4 cup lemon juice
1 tbsp lemon zest
1 clove garlic, minced
1 tsp salt
1/2 tsp black pepper

Instructions

1. Cook pasta according to package instructions, then rinse with cold water and drain.
2. In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, black olives, parsley, and basil.
3. In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, salt, and black pepper.
4. Pour the dressing over the pasta salad and toss to combine.
5. Add feta cheese and gently mix.
6. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.

Storage

Store in an airtight container in the refrigerator for up to 3 days.
