Zesty Lemon-Herb Macaroni Salad

Ingredients
8 oz elbow macaroni
1 cup mayonnaise
2 tbsp lemon juice
1 tsp lemon zest
1 tbsp Dijon mustard
1/2 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
1/2 cup chopped celery
1/2 cup diced red bell pepper
1/4 cup sliced green onions
2 tbsp chopped fresh parsley
1 tbsp chopped fresh dill
Instructions
1. Cook the elbow macaroni according to package instructions until al dente. Drain and rinse with cold water to cool.
2. In a large bowl, whisk together mayonnaise, lemon juice, lemon zest, Dijon mustard, garlic powder, salt, and black pepper until smooth.
3. Add the cooled macaroni, chopped celery, diced red bell pepper, sliced green onions, chopped parsley, and chopped dill to the bowl.
4. Toss everything together until the ingredients are well coated with the dressing.
5. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
Storage
Store the macaroni salad in an airtight container in the refrigerator for up to 3 days.
Reheating
For best results, serve cold directly from the refrigerator. However, if desired, allow the salad to sit at room temperature for 15 minutes before serving.
