Zesty Lemon Herb Couscous

Ingredients
1 cup couscous
1 1/4 cups water
1/4 teaspoon salt
1 tablespoon olive oil
1/4 cup fresh lemon juice
1 teaspoon lemon zest
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/4 cup chopped fresh basil
1/2 teaspoon black pepper
1/4 cup toasted pine nuts
1/4 cup crumbled feta cheese
Instructions
1. In a medium saucepan, bring water and salt to a boil.
2. Remove from heat, add couscous and olive oil, stir, cover, and let sit for 5 minutes.
3. Fluff couscous with a fork and transfer to a large mixing bowl.
4. Add lemon juice, lemon zest, parsley, mint, basil, and black pepper to the couscous and toss well.
5. Gently fold in toasted pine nuts and crumbled feta cheese.
6. Serve immediately or at room temperature.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently in the microwave for 1-2 minutes or until warmed through.
