Zesty Lemon Herb Chicken Soup

Ingredients

1 lb chicken breast
2 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
3 carrots, sliced
2 stalks celery, chopped
8 cups chicken broth
1 cup water
1/2 cup lemon juice
1 tbsp lemon zest
1 tsp dried thyme
1 tsp dried rosemary
1/2 cup fresh parsley, chopped
Salt and pepper to taste

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sauté until translucent.
3. Stir in carrots and celery, cook for 5 minutes.
4. Add chicken breast and cook until browned.
5. Pour in chicken broth and water, bring to a boil.
6. Reduce heat, cover, and simmer for 20 minutes.
7. Remove chicken, shred, and return to the pot.
8. Add lemon juice, zest, thyme, rosemary, salt, and pepper.
9. Simmer for another 10 minutes.
10. Stir in fresh parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stove over medium heat until hot, or microwave for 2-3 minutes.
