Zesty Lemon Ginger Stir-Fry

Ingredients
1 lb chicken breast, thinly sliced
2 tbsp olive oil
1 tbsp fresh ginger, minced
2 cloves garlic, minced
1 red bell pepper, sliced
1 cup broccoli florets
1 cup sugar snap peas
1/4 cup soy sauce
1 lemon, juiced and zested
1 tbsp honey
1/4 tsp red pepper flakes
2 green onions, chopped
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pan over medium-high heat.
2. Add chicken slices and cook until golden brown.
3. Stir in ginger and garlic, sauté until fragrant.
4. Add red bell pepper, broccoli, and sugar snap peas, stir-fry for 3-4 minutes.
5. In a small bowl, mix soy sauce, lemon juice, lemon zest, honey, and red pepper flakes.
6. Pour the sauce over the stir-fry and toss to combine.
7. Cook for an additional 2 minutes until vegetables are tender-crisp.
8. Garnish with green onions and season with salt and pepper. Serve immediately.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a pan over medium heat until thoroughly heated, or microwave on high for 1-2 minutes.
