Zesty Lemon Ginger Chicken Stir Fry

Ingredients
1 lb chicken breast, thinly sliced
2 tbsp vegetable oil
1 tbsp fresh ginger, minced
2 garlic cloves, minced
1 red bell pepper, sliced
1 cup broccoli florets
1/2 cup snap peas
1/4 cup chicken broth
2 tbsp soy sauce
1 tbsp lemon juice
1 tsp lemon zest
1 tsp honey
1/2 tsp red pepper flakes
Salt and pepper to taste
1 tbsp sesame seeds
2 green onions, sliced
Cooked white rice, for serving
Instructions
1. Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat.
2. Add the sliced chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
3. In the same skillet, add the remaining oil, minced ginger, and garlic. Sauté until fragrant, about 1 minute.
4. Add the red bell pepper, broccoli, and snap peas. Stir fry for 3-4 minutes until the vegetables are tender-crisp.
5. In a small bowl, mix chicken broth, soy sauce, lemon juice, lemon zest, honey, and red pepper flakes.
6. Return the chicken to the skillet and pour the sauce over the ingredients. Stir well to combine and cook for another 2-3 minutes until heated through.
7. Season with salt and pepper to taste. Garnish with sesame seeds and sliced green onions.
8. Serve hot over cooked white rice.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat until warmed through, stirring occasionally.
