Zesty Lemon Ginger Chicken Soup

Ingredients
2 lbs chicken thighs
8 cups chicken broth
2 tbsp olive oil
1 onion, diced
3 garlic cloves, minced
1 tbsp fresh ginger, grated
1 large carrot, sliced
1 celery stalk, diced
1 lemon, zested and juiced
2 tsp salt
1 tsp black pepper
1/4 cup fresh parsley, chopped
1 tsp thyme
1 cup baby spinach
1 tbsp soy sauce
1 bay leaf
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion, garlic, and ginger; sauté until fragrant, about 3 minutes.
3. Add chicken thighs and cook until browned on all sides, about 5 minutes.
4. Pour in chicken broth, then add carrot, celery, lemon zest, lemon juice, salt, pepper, soy sauce, thyme, and bay leaf.
5. Bring to a boil, then reduce heat to low and simmer for 30 minutes.
6. Add spinach and parsley, cooking for an additional 5 minutes.
7. Remove bay leaf and serve hot.
Storage
Allow the soup to cool completely, then store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat on the stove over medium heat until warmed through, stirring occasionally.
