Zesty Lemon Garlic Zucchini

Ingredients
2 medium zucchinis
1 tablespoon olive oil
2 cloves garlic, minced
1 lemon, juiced
1 teaspoon lemon zest
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped
1/4 cup grated Parmesan cheese (optional)
Instructions
1. Preheat oven to 400°F (200°C).
2. Slice zucchinis into thin rounds and place in a large bowl.
3. Add olive oil, minced garlic, lemon juice, lemon zest, salt, and black pepper to the bowl, and toss until zucchini is well-coated.
4. Arrange the zucchini slices in a single layer on a baking sheet.
5. Bake in the preheated oven for 15 minutes.
6. Remove from oven, sprinkle with Parmesan cheese and chopped parsley.
7. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and zucchini is tender.
8. Serve warm and enjoy.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F (175°C) for 5-7 minutes, or until heated through. Alternatively, microwave on high for 1-2 minutes.
