Zesty Lemon Delight Cake

Ingredients

1 cup unsalted butter
1 1/2 cups granulated sugar
3 large eggs
1 teaspoon vanilla extract
2 tablespoons lemon zest
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup whole milk
1/4 cup fresh lemon juice
1 cup powdered sugar
2 tablespoons fresh lemon juice (for glaze)

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
2. In a large bowl, cream the butter and sugar until light and fluffy.
3. Add the eggs one at a time, beating well after each addition.
4. Stir in the vanilla extract and lemon zest.
5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
6. Gradually add the dry ingredients to the wet mixture, alternating with the milk and lemon juice, beginning and ending with the dry ingredients.
7. Pour the batter into the prepared loaf pan and smooth the top.
8. Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
9. While the cake is cooling, mix powdered sugar and lemon juice to create the glaze.
10. Once the cake is cool, drizzle the glaze over the top and let it set before slicing.

Storage

Store at room temperature in an airtight container for up to 3 days.

Reheating
