Zesty Lemon Chicken and Broccoli Stir-Fry
A vibrant twist on the classic stir-fry, this quick and easy dish combines tender chicken with fresh broccoli, all enhanced by a zesty lemon and herb sauce. Perfect for a nutritious weeknight dinner that will awaken your taste buds.

Ingredients
1 lb chicken breast, sliced thin
2 cups broccoli florets
1 red bell pepper, sliced
1 lemon, zested and juiced
3 tbsp soy sauce
2 tbsp olive oil
1 tbsp honey
2 cloves garlic, minced
1 inch ginger, grated
1 tsp cornstarch
1/4 cup water
Salt and pepper to taste
2 tbsp fresh parsley, chopped
Instructions
1. In a small bowl, mix the lemon zest and juice, soy sauce, honey, garlic, ginger, and cornstarch with water. Set aside.
2. Heat 1 tbsp of olive oil in a large pan over medium-high heat. Add the chicken slices and season with salt and pepper. Stir-fry until golden brown and cooked through, about 5-7 minutes. Remove from the pan and set aside.
3. In the same pan, add the remaining olive oil. Add broccoli and red bell pepper, stir-frying for 3-4 minutes until just tender.
4. Return the chicken to the pan, pour over the lemon sauce, and toss everything to coat. Cook for another 2-3 minutes until the sauce thickens slightly.
5. Remove from heat, sprinkle with fresh parsley, and serve hot.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat until heated through, or microwave for 1-2 minutes.
