Zesty Leftover Chicken Casserole

Ingredients

2 cups leftover cooked chicken, shredded
1 cup salsa
1/2 cup sour cream
1 can (15 oz) black beans, drained and rinsed
1½ cups shredded cheddar cheese
1 cup corn kernels, frozen or fresh
1 tbsp taco seasoning
1 tbsp olive oil
1/2 cup chopped green onions
1/4 cup cilantro, chopped
10 corn tortillas, cut into strips
1 lime, cut into wedges

Instructions

1. Preheat oven to 375°F.
2. Heat olive oil in a skillet over medium heat and sauté green onions until soft.
3. In a large mixing bowl, combine shredded chicken, salsa, sour cream, black beans, corn, taco seasoning, and half of the cheese.
4. Stir in sautéed green onions and half of the chopped cilantro.
5. Lightly grease a 9x13-inch baking dish.
6. Layer half of the tortilla strips on the bottom of the dish.
7. Spoon the chicken mixture over the tortilla strips evenly.
8. Top with remaining tortilla strips.
9. Sprinkle the rest of the cheese over the top.
10. Bake in the preheated oven for 25-30 minutes or until bubbly and cheese is golden brown.
11. Garnish with remaining cilantro and serve with lime wedges.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat individual portions in the microwave for 2-3 minutes or until heated through.
