Ingredients
1 bunch kale, chopped
2 oranges, peeled and segmented
1 grapefruit, peeled and segmented
1/2 cup roasted almonds, chopped
1/4 cup fresh mint leaves, chopped
1/4 cup olive oil
2 tablespoons balsamic vinegar
Salt and pepper to taste
Instructions
1. In a large bowl, combine chopped kale, orange segments, and grapefruit segments.
2. Add the roasted almonds and mint leaves to the bowl.
