Zesty Italian Pasta Medley

A vibrant and refreshing Italian pasta salad featuring a medley of colorful vegetables and a zesty dressing, perfect for a quick meal or side dish.

Ingredients

8 oz rotini pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red bell pepper, diced
1/4 cup red onion, thinly sliced
1/2 cup black olives, sliced
1/4 cup Italian dressing
1/4 cup parmesan cheese, grated
2 tbsp fresh basil, chopped

Instructions

1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water.
2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red bell pepper, red onion, and black olives.
3. Pour the Italian dressing over the salad and toss to combine evenly.
4. Sprinkle the parmesan cheese and fresh basil over the top and toss gently.
5. Serve immediately or let it chill in the refrigerator for at least 30 minutes to enhance flavors.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Best served cold and does not require reheating.
