Zesty Italian Lasagna Soup

Ingredients

1 lb Italian sausage
1 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
1 tsp red pepper flakes
1 tsp Italian seasoning
1/4 cup tomato paste
1 can (28 oz) crushed tomatoes
6 cups chicken broth
8 oz lasagna noodles, broken into pieces
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh basil
Salt and pepper to taste

Instructions

1. In a large pot, heat olive oil over medium-high heat. Add Italian sausage and cook until browned.
2. Add onion and garlic to the pot and sauté until the onion is translucent.
3. Stir in red pepper flakes, Italian seasoning, and tomato paste; cook for 1 minute.
4. Pour in crushed tomatoes and chicken broth, bring the mixture to a boil.
5. Add broken lasagna noodles, reduce heat, and simmer until noodles are tender, about 20 minutes.
6. In a small bowl, combine ricotta cheese and Parmesan cheese.
7. Serve soup hot, topped with a dollop of the cheese mixture and fresh basil.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a saucepan over medium heat until warmed through, adding a little broth if needed to maintain desired consistency.
