Zesty Herb-Crusted Lemon Chicken

Ingredients
4 boneless, skinless chicken breasts
2 lemons, zested and juiced
1 cup all-purpose flour
1 cup breadcrumbs
2 tsp dried oregano
2 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
2 eggs
1/4 cup milk
2 tbsp olive oil
2 garlic cloves, minced
Instructions
1. Preheat the oven to 375°F.
2. Pound chicken breasts to an even thickness.
3. In a bowl, mix flour, salt, and pepper.
4. In another bowl, whisk eggs and milk.
5. In a third bowl, mix breadcrumbs, lemon zest, oregano, and thyme.
6. Dredge chicken in flour, then egg mixture, then breadcrumb mixture.
7. Heat olive oil in a skillet over medium heat.
8. Sear chicken until golden on both sides, about 3 minutes each.
9. Transfer chicken to a baking dish.
10. Drizzle with lemon juice and minced garlic.
11. Bake in the oven for 20 minutes or until cooked through.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F for 10 minutes or until heated through.
