Ingredients
3 medium zucchinis
2 tbsp olive oil
1 tbsp lemon juice
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
Salt and pepper to taste
1 tbsp fresh parsley, chopped
8 wooden skewers
Instructions
1. Preheat your grill to medium-high heat.
2. Soak wooden skewers in water for 10 minutes to prevent burning.
3. Slice zucchinis into 1/4-inch thick rounds.
4. In a bowl, mix olive oil, lemon juice, garlic powder, onion powder, smoked paprika, salt, and pepper.
5. Thread zucchini slices onto skewers.
6. Brush zucchini with the olive oil mixture, ensuring even coverage.
7. Place skewers on the grill and cook for 5 minutes per side, or until grill marks form and zucchini is tender.
8. Remove from grill and sprinkle with chopped parsley before serving.
