Zesty Glazed Meatloaf

Ingredients

1 1/2 lbs ground beef
1/2 cup breadcrumbs
1/2 cup milk
1 egg
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp pepper
1 cup ketchup
2 tbsp brown sugar
1 tbsp apple cider vinegar

Instructions

1. Preheat your oven to 350°F (175°C).
2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, and pepper. Mix until just combined.
3. Shape the mixture into a loaf and place it in a baking dish.
4. In a small bowl, mix together ketchup, brown sugar, and apple cider vinegar to create the glaze.
5. Spread half of the glaze over the meatloaf.
6. Bake in the preheated oven for 45 minutes.
7. Remove from the oven and spread the remaining glaze over the top.
8. Return to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (70°C).
9. Let rest for 10 minutes before slicing and serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat slices in the microwave for 1-2 minutes or until heated through.
