Zesty Cream Cheese Chicken with Herb Infusion

Ingredients

4 boneless skinless chicken breasts
8 oz cream cheese, softened
1/4 cup Parmesan cheese, grated
1 lemon, zested and juiced
3 cloves garlic, minced
2 tbsp fresh dill, chopped
2 tbsp fresh parsley, chopped
1 tbsp olive oil
Salt and pepper to taste
1/4 cup chicken broth

Instructions

1. Preheat oven to 375°F.
2. In a medium bowl, mix cream cheese, Parmesan, lemon zest, lemon juice, minced garlic, dill, parsley, salt, and pepper until well combined.
3. Heat olive oil in a large oven-safe skillet over medium-high heat.
4. Season chicken breasts with salt and pepper on both sides.
5. Add chicken to the skillet and sear for 3-4 minutes on each side until golden brown.
6. Remove the skillet from heat and spread the cream cheese mixture over the chicken breasts evenly.
7. Pour chicken broth into the skillet around the chicken.
8. Transfer the skillet to the oven and bake for 20-25 minutes until chicken is cooked through and topping is bubbly.
9. Allow to rest for a few minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the microwave at medium power until heated through, or warm in a preheated oven at 350°F for about 10 minutes.
