Ingredients

2 cups all-purpose flour
1 cup granulated sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup fresh cranberries
1/2 cup chopped walnuts
1 tbsp orange zest
1/4 cup fresh orange juice
1/4 cup unsalted butter, melted
1 large egg
3/4 cup buttermilk
1 tsp vanilla extract

Instructions

1. Preheat your oven to 350°F and grease a 9x5 inch loaf pan.
2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
3. Gently fold in the cranberries, walnuts, and orange zest.
4. In another bowl, whisk together the orange juice, melted butter, egg, buttermilk, and vanilla extract.
5. Pour the wet ingredients into the dry ingredients, stirring until just combined; do not overmix.
6. Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Storage

Store the bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.

Reheating

To reheat, wrap the bread in aluminum foil and warm in the oven at 325°F for about 10 minutes.
