Zesty Cranberry Orange Spice Muffins

Ingredients

2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, melted
2 large eggs
1 cup freshly squeezed orange juice
1 tablespoon orange zest
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 1/2 cups fresh cranberries, coarsely chopped
1/2 cup chopped walnuts

Instructions

1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
3. In another bowl, combine the melted butter, eggs, orange juice, orange zest, and vanilla extract.
4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
5. Fold in the cranberries and walnuts until evenly distributed.
6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
8. Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Storage

Store the muffins in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.

Reheating

To reheat, warm the muffins in a preheated oven at 300°F for about 5 minutes or microwave on high for 10-15 seconds.
