Ingredients

1 lb fresh green beans, trimmed and halved
1 tbsp olive oil
1 medium onion, thinly sliced
1 clove garlic, minced
1 cup crimini mushrooms, sliced
1 cup vegetable broth
1/2 cup freshly squeezed orange juice
1 tbsp lemon zest
1/4 cup almond flour
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
Salt and pepper to taste

Instructions

1. Preheat your oven to 375°F (190°C).
2. In a large skillet over medium heat, add olive oil and sauté onions until translucent, about 5 minutes.
3. Add garlic and mushrooms to the skillet, cooking until mushrooms are browned.
