Zesty Citrus Coleslaw
A refreshing and tangy twist on the classic coleslaw, featuring vibrant citrus flavors and a hint of spice. Perfect for summer barbecues or as a crisp side dish.

Ingredients
1 medium head of green cabbage, thinly sliced
1 medium carrot, grated
1/2 red onion, thinly sliced
1/4 cup fresh cilantro, chopped
1/4 cup lime juice
1/4 cup orange juice
1 tbsp apple cider vinegar
2 tbsp olive oil
1 tbsp honey
1 tsp ground cumin
1/2 tsp chili powder
Salt and pepper to taste
1 jalapeño, seeded and minced
Instructions
1. In a large bowl, combine the sliced cabbage, grated carrot, and red onion.
2. In a smaller bowl, whisk together the lime juice, orange juice, apple cider vinegar, olive oil, honey, ground cumin, chili powder, salt, and pepper.
3. Pour the dressing over the cabbage mixture and toss well to combine.
4. Gently fold in the minced jalapeño and chopped cilantro.
5. Let the coleslaw sit for at least 30 minutes in the refrigerator to allow flavors to meld before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Coleslaw is best served cold and does not require reheating.
