Zesty Citrus Chicken Salad

Ingredients

2 lbs cooked chicken breast
1 cup diced celery
1/2 cup chopped red onion
1/2 cup dried cranberries
1/3 cup chopped walnuts
1 cup mixed salad greens
1/4 cup fresh orange juice
2 tbsp lemon juice
1/4 cup mayonnaise
1 tbsp dijon mustard
1 tsp honey
Salt and pepper to taste

Instructions

1. In a large bowl, combine the cooked chicken breast, diced celery, chopped red onion, dried cranberries, and chopped walnuts.
2. In a small bowl, whisk together the fresh orange juice, lemon juice, mayonnaise, dijon mustard, honey, salt, and pepper to create the dressing.
3. Pour the dressing over the chicken mixture and toss until well combined.
4. Serve the chicken salad on a bed of mixed salad greens.

Storage

Store in an airtight container in the refrigerator for up to 3 days.
