Zesty Citrus Bean Salad
A refreshing and vibrant salad that combines a medley of beans with a zesty citrus vinaigrette, perfect for a light lunch or side dish.

Ingredients
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) garbanzo beans, drained and rinsed
1 cup cherry tomatoes, halved
1 small red onion, finely chopped
1 yellow bell pepper, diced
1/2 cup fresh cilantro, chopped
1/4 cup fresh lime juice
1/4 cup fresh orange juice
2 tbsp olive oil
1 tbsp honey
1 tsp ground cumin
Salt and pepper to taste
Instructions
1. In a large bowl, combine the black beans and garbanzo beans.
2. Add the cherry tomatoes, red onion, and yellow bell pepper to the beans.
3. In a small bowl, whisk together lime juice, orange juice, olive oil, honey, and ground cumin to make the dressing.
4. Pour the dressing over the bean mixture and toss until everything is evenly coated.
5. Stir in the fresh cilantro and season with salt and pepper to taste.
6. Let the salad sit for at least 15 minutes to allow the flavors to meld.
7. Serve chilled or at room temperature.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Enjoy cold or reheat in a microwave-safe dish for 1-2 minutes, stirring halfway through.
