Zesty Chicken Enchilada Casserole

This Zesty Chicken Enchilada Casserole combines layers of spicy chicken, creamy beans, and tangy cheese for a mouthwatering Mexican-inspired dish perfect for family dinners or gatherings.

Ingredients

2 lbs boneless skinless chicken breasts
1 tbsp olive oil
1 large onion, diced
2 tsp garlic powder
1 tsp cumin
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
2 cups enchilada sauce
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn kernels, drained
12 corn tortillas, cut into strips
2 cups shredded Mexican cheese blend
1/4 cup chopped cilantro
1 lime, cut into wedges

Instructions

1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
3. Add chicken breasts to the skillet and cook until browned on both sides, about 6 minutes per side. Remove and shred the chicken using two forks.
4. In the same skillet, stir in garlic powder, cumin, chili powder, smoked paprika, salt, and black pepper.
5. Add shredded chicken, enchilada sauce, black beans, and corn. Mix well and simmer for 5 minutes.
6. In a greased 9x13 inch baking dish, layer half of the tortilla strips, half of the chicken mixture, and 1 cup of cheese.
7. Repeat with the remaining tortilla strips, chicken mixture, and cheese.
8. Cover with foil and bake for 25 minutes.
9. Remove foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
10. Garnish with chopped cilantro and serve with lime wedges.

Storage

Store the casserole in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat individual portions in the microwave for 1-2 minutes, or the entire casserole in a preheated oven at 350°F (175°C) for 15-20 minutes.
