Zesty Bean and Maize Medley
A vibrant and refreshing salsa featuring black beans, sweet corn, and a medley of zesty flavors. Perfect as a dip or a topping for your favorite dishes.

Ingredients
1 can black beans (15 oz), drained and rinsed
1 cup sweet corn, fresh or canned
1 red bell pepper, diced
1/2 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
1 tablespoon olive oil
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 jalapeño, seeded and minced (optional)
Instructions
1. In a large bowl, combine the black beans, corn, red bell pepper, red onion, and cilantro.
2. In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and black pepper.
3. Pour the dressing over the bean mixture and toss to combine evenly.
4. If desired, add the minced jalapeño for an extra kick of heat.
5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
6. Serve chilled as a dip with tortilla chips or as a topping for tacos, grilled meats, or salads.
Storage
Store the salsa in an airtight container in the refrigerator for up to 3 days.
Reheating
Enjoy the salsa cold or allow it to come to room temperature before serving.
