Zesty Avocado Three Bean Salad
This refreshing and vibrant Zesty Avocado Three Bean Salad combines the hearty flavors of chickpeas, black beans, and green beans with creamy avocado and a zesty lime dressing. Perfect for a quick lunch or a side dish at your next barbecue.

Ingredients
1 can (15 oz) chickpeas, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
2 cups fresh green beans, trimmed and cut into 1-inch pieces
1 large avocado, diced
1/2 red onion, finely chopped
1/4 cup fresh cilantro, chopped
1/4 cup lime juice
2 tbsp olive oil
1 tbsp honey
1 tsp ground cumin
1/2 tsp salt
1/2 tsp black pepper
Instructions
1. In a large pot, bring water to a boil and blanch the green beans for about 3 minutes until just tender-crisp. Drain and rinse under cold water.
2. In a small bowl, whisk together lime juice, olive oil, honey, cumin, salt, and pepper to make the dressing.
3. In a large mixing bowl, combine chickpeas, black beans, blanched green beans, avocado, red onion, and cilantro.
4. Pour the dressing over the bean mixture and gently toss to combine.
5. Serve immediately or refrigerate for at least 30 minutes to allow flavors to meld.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Best served cold, does not require reheating. If desired, allow to come to room temperature for 10 minutes before serving.
