Zesty Avocado Cream Slaw

A refreshing and creamy coleslaw infused with the rich flavors of avocado and lime, making it a perfect side dish for summer gatherings and barbecue parties.

Ingredients

1 medium head green cabbage, shredded
2 large carrots, grated
2 ripe avocados, peeled and pitted
1/4 cup fresh lime juice
1/2 cup plain Greek yogurt
2 tbsp honey
1/4 cup cilantro, chopped
1 tsp sea salt
1/2 tsp black pepper
1/4 cup red onion, finely chopped

Instructions

1. In a large mixing bowl, combine the shredded cabbage and grated carrots.
2. In a separate bowl, mash the avocados until smooth and mix in the lime juice, Greek yogurt, and honey until creamy.
3. Stir in the cilantro, sea salt, black pepper, and red onion into the avocado mixture.
4. Pour the avocado dressing over the cabbage and carrot mixture, tossing well to coat evenly.
5. Chill the coleslaw in the refrigerator for at least 30 minutes before serving for best flavor.

Storage

Store covered in the refrigerator for up to 3 days.

Reheating

Consume cold; does not require reheating.
