Zesty Apple-Peanut Coleslaw

Ingredients
1/2 head of green cabbage, shredded
1 large Granny Smith apple, julienned
1/2 cup of roasted peanuts, chopped
1/4 cup of fresh cilantro, chopped
1/3 cup of mayonnaise
2 tbsp of apple cider vinegar
1 tbsp of honey
1 tsp of Dijon mustard
1/2 tsp of salt
1/4 tsp of black pepper
Instructions
1. In a large mixing bowl, combine the shredded cabbage, julienned apple, chopped peanuts, and cilantro.
2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth.
3. Pour the dressing over the cabbage mixture and toss until thoroughly combined.
4. Let the coleslaw sit for at least 30 minutes in the refrigerator to allow the flavors to meld.
5. Stir again before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Coleslaw is best served cold and does not require reheating. If desired, allow it to sit at room temperature for 10-15 minutes before serving.
