Ingredients
2 navel oranges
1 ruby red grapefruit
1 blood orange
1/2 cup pomegranate seeds
1/4 cup fresh mint leaves
2 tbsp olive oil
1 tbsp honey
1 tbsp lemon juice
1/4 tsp sea salt
1/8 tsp black pepper
Instructions
1. Peel the navel oranges, ruby red grapefruit, and blood orange, then slice them into thin rounds, removing any seeds as needed.
2. Arrange the citrus slices on a large serving platter, alternating colors for a pleasing presentation.
3. Scatter the pomegranate seeds evenly over the citrus slices.
4. In a small bowl, whisk together the olive oil, honey, lemon juice, sea salt, and black pepper to create the dressing.
5. Drizzle the dressing over the salad.
6. Garnish with fresh mint leaves just before serving.
Storage
Store the salad in an airtight container in the refrigerator for up to 2 days. If possible, keep the dressing separate and add fresh mint before serving.
Reheating
This salad is best enjoyed chilled and does not require reheating.
