Winter Beef and Barley Stew

A deliciously warming Winter Beef and Barley Stew, perfect for cozy nights. Featuring tender chunks of beef, hearty barley, and a medley of winter vegetables simmered in a rich, savory broth.

Ingredients

1.5 lbs beef chuck, cut into 1-inch cubes
2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
3 carrots, peeled and sliced
2 parsnips, peeled and sliced
2 stalks celery, diced
1 cup pearl barley
6 cups beef broth
2 cups water
1 can (14 oz) diced tomatoes
2 bay leaves
1 tsp dried thyme
Salt and pepper to taste
1/4 cup fresh parsley, chopped

Instructions

1. Heat 1 tablespoon of olive oil in a large pot over medium heat. Add half of the beef cubes, season with salt and pepper, and brown on all sides. Remove and set aside. Repeat with remaining beef.
2. In the same pot, add another tablespoon of olive oil. Add onions, garlic, carrots, parsnips, and celery. Sauté until vegetables begin to soften, about 5 minutes.
3. Stir in the pearl barley, beef broth, water, diced tomatoes, bay leaves, thyme, and browned beef. Bring to a boil.
4. Reduce heat to low, cover, and simmer for 1.5 hours, or until beef and barley are tender.
5. Remove bay leaves, adjust seasoning with salt and pepper if necessary. Stir in fresh parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stovetop over medium heat until heated through, or microwave on medium power, stirring occasionally, until warm.
