Wild Boar Chili

Ingredients

2 lbs wild boar meat, cubed
2 tbsp olive oil
1 large onion, chopped
4 cloves garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
2 cans (15 oz) diced tomatoes
2 cans (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
3 tbsp chili powder
2 tsp ground cumin
1 tsp smoked paprika
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper (optional)
2 cups beef broth
1 tbsp tomato paste
1 bay leaf
1 tbsp apple cider vinegar
Fresh cilantro, for garnish
Sour cream, for serving
Shredded cheddar cheese, for serving

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add the wild boar meat and brown it on all sides. Remove and set aside.
3. In the same pot, add onions, garlic, and bell peppers. Sauté until the onions are translucent.
4. Stir in the chili powder, ground cumin, smoked paprika, salt, black pepper, and cayenne pepper. Cook for 1 minute.
5. Return the boar meat to the pot, and add diced tomatoes, kidney beans, black beans, beef broth, tomato paste, and bay leaf.
6. Bring to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours or until the meat is tender.
7. Stir in apple cider vinegar and adjust seasoning to taste.
8. Remove bay leaf before serving. Garnish with fresh cilantro, sour cream, and shredded cheddar cheese.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stovetop over medium heat until warmed through, or in the microwave in a microwave-safe bowl.
