Wholesome Pumpkin Spice Bars

Delicious pumpkin spice bars that are moist, flavorful, and perfect for fall gatherings. Easy to make and full of rich pumpkin flavor, with a hint of cinnamon and nutmeg.

Ingredients

1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup pumpkin puree
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/2 cup cream cheese
1/4 cup unsalted butter (softened)
2 cups powdered sugar

Instructions

1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
3. In another bowl, mix pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
4. Gradually combine wet ingredients into dry ingredients, mixing until just combined.
5. Pour the batter into the prepared baking pan and spread evenly.
6. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
7. While bars are cooling, prepare the frosting by beating together cream cheese and butter until creamy.
8. Gradually add powdered sugar, beating until smooth and spreadable.
9. Once the bars are completely cool, spread the frosting evenly over the top.
10. Cut into bars and serve.

Storage

Store pumpkin bars in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat individual bars in the microwave for 10-15 seconds, or enjoy cold from the fridge.
