Ingredients

1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped peanuts

Instructions

1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. In a large mixing bowl, cream together the peanut butter, butter, brown sugar, and granulated sugar until light and fluffy.
3. Beat in the eggs one at a time, then add the vanilla extract.
4. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
5. Gradually add the dry ingredients to the wet mixture until just combined.
6. Fold in the chopped peanuts.
7. Drop tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
8. Flatten each cookie slightly with a fork, creating a criss-cross pattern.
9. Bake for 10-12 minutes or until the edges are golden but the centers are still soft.
10. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
