Ingredients

3 cups watermelon, cubed
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 teaspoon grated ginger
2 cups cooked sushi rice
1 avocado, sliced
1 cucumber, sliced
1/2 cup edamame
2 tablespoons pickled ginger
1 tablespoon sesame seeds
2 green onions, chopped

Instructions

1. In a large bowl, combine soy sauce, sesame oil, rice vinegar, and grated ginger. Add watermelon cubes and toss to coat evenly. Marinate for at least 15 minutes.
2. Prepare sushi rice according to package instructions. Set aside to cool slightly.
3. In a serving bowl, layer sushi rice, marinated watermelon, avocado, cucumber, edamame, and pickled ginger.
4. Sprinkle sesame seeds and green onions over the top for garnish.
5. Serve immediately and enjoy!

Storage

Store any leftover components separately in airtight containers in the refrigerator for up to 2 days.

Reheating

To reheat rice, gently warm in the microwave or on the stovetop. Watermelon and vegetables are best served chilled.
