Ingredients
1 French baguette
2 ripe avocados
1 cup fresh basil leaves
2 cloves garlic
1/4 cup walnuts
1/4 cup grated Parmesan cheese
1/2 cup olive oil
1 tablespoon lemon juice
1 cup cherry tomatoes
Salt to taste
Pepper to taste
Instructions
1. Preheat oven to 400°F.
2. Slice the baguette into 1/2-inch thick slices and place on a baking sheet.
3. Drizzle with olive oil and bake for 5-7 minutes until golden brown.
4. In a food processor, combine basil, garlic, walnuts, Parmesan, olive oil, and lemon juice to make pesto.
5. Slice avocados and cherry tomatoes.
6. Spread pesto on toasted baguette slices.
7. Top with avocado and tomatoes.
8. Season with salt and pepper to taste.
Storage
Store leftover bruschetta in an airtight container in the refrigerator for up to 2 days.
