Vintage Porcupine Meatballs

Ingredients

1 lb ground beef
1/2 cup uncooked long grain rice
1/4 cup finely chopped onion
1 egg
1 tsp salt
1/4 tsp black pepper
1/4 cup water
2 cups canned tomato sauce
1 cup water
1 tbsp Worcestershire sauce

Instructions

1. In a large bowl, combine ground beef, rice, onion, egg, salt, black pepper, and 1/4 cup of water. Mix well.
2. Shape the mixture into meatballs, about 1 1/2 inches in diameter.
3. In a large skillet, combine tomato sauce, 1 cup of water, and Worcestershire sauce, then bring to a simmer.
4. Gently add the meatballs to the simmering sauce.
5. Cover and simmer for 45 minutes, stirring occasionally.
6. Serve hot, garnished with fresh herbs if desired.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat until warmed through, or in the microwave for 1-2 minutes per serving.
