Ingredients
4 cups chopped Romaine lettuce
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red onion, finely chopped
1 cup sweet corn
1 cup shredded cheddar cheese
6 strips bacon, cooked and crumbled
1/2 cup Greek yogurt
1/4 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
Salt and pepper to taste
2 tablespoons fresh dill, chopped
Instructions
1. In a large glass bowl, layer the Romaine lettuce as the base.
2. Evenly spread the halved cherry tomatoes over the lettuce layer.
3. Next, add a layer of diced cucumber, followed by the finely chopped red onion.
4. Sprinkle the sweet corn over the onions, followed by a generous layer of shredded cheddar cheese.
5. On top of the cheese, add the crumbled bacon bits evenly.
6. In a separate bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper to create the dressing.
7. Pour the dressing over the salad layers, ensuring even coverage.
8. Garnish with fresh dill and serve immediately or refrigerate until serving.
