Vibrant Garden Seven Layer Salad

Ingredients
1 cup mayonnaise
1/2 cup sour cream
2 tablespoons apple cider vinegar
1 tablespoon honey
1 teaspoon salt
1 teaspoon black pepper
5 cups romaine lettuce, chopped
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup red bell pepper, diced
1 cup shredded carrots
1 cup sweet corn, drained
1 cup peas, thawed
1 cup shredded cheddar cheese
1/4 cup green onions, sliced
1/2 cup chopped cooked bacon
Instructions
1. In a small mixing bowl, whisk together mayonnaise, sour cream, apple cider vinegar, honey, salt, and black pepper to make the dressing. Set aside.
2. Layer the salad in a large glass bowl starting with the chopped romaine lettuce as the base.
3. Evenly distribute the cherry tomatoes over the lettuce, followed by layers of cucumber, red bell pepper, shredded carrots, sweet corn, and peas.
4. Drizzle half of the dressing evenly over the layered vegetables.
5. Sprinkle the shredded cheddar cheese over the top, followed by the sliced green onions.
6. Add the remaining dressing on top, spreading it to cover the surface.
7. Finish with an even layer of chopped cooked bacon.
8. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Storage
Cover with plastic wrap and store in the refrigerator for up to 2 days.
Reheating
This salad is best served cold; do not reheat.
