Velvety Thyme Mushroom Soup

Ingredients
2 tbsp unsalted butter
1 tbsp olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 lb cremini mushrooms, sliced
1/4 cup all-purpose flour
4 cups chicken or vegetable broth
1 cup heavy cream
1 tsp dried thyme
Salt and pepper to taste
Fresh thyme sprigs for garnish
Instructions
1. In a large pot, melt butter with olive oil over medium heat.
2. Add onion and garlic; sauté until onion is translucent.
3. Stir in sliced mushrooms, cooking until they are browned and tender, about 8 minutes.
4. Sprinkle flour over the mushrooms, stirring well to coat.
5. Slowly pour in the broth, stirring constantly until the soup begins to thicken.
6. Reduce heat and stir in the cream and thyme. Simmer for 10 minutes, stirring occasionally.
7. Season with salt and pepper to taste.
8. Serve hot, garnished with fresh thyme sprigs.
Storage
Store in an airtight container and refrigerate for up to 3 days.
Reheating
Reheat gently on the stove over low heat, stirring occasionally until hot.
