Vegan Tacos with Cauliflower Filling
These vegan tacos offer a healthy twist on the traditional favorite, featuring spiced cauliflower as the main filling, complemented by fresh salsa and creamy avocado for a burst of flavor and freshness.

Ingredients
1 large cauliflower, cut into florets
2 tbsp olive oil
1 tbsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
8 small corn tortillas
1 cup cherry tomatoes, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 lime, juiced
1 avocado, sliced
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a large bowl, toss cauliflower florets with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper until well coated.
3. Spread the cauliflower evenly on a baking sheet and roast for 25-30 minutes, or until tender and golden brown.
4. While the cauliflower is roasting, prepare the salsa by combining cherry tomatoes, red onion, cilantro, and lime juice in a small bowl.
5. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side or until pliable.
6. Assemble the tacos by placing roasted cauliflower in each tortilla, topped with fresh salsa and avocado slices.
7. Serve immediately and enjoy your flavorful vegan tacos.
Storage
Store leftover roasted cauliflower and salsa separately in airtight containers in the refrigerator for up to 3 days.
Reheating
Reheat the cauliflower in a preheated oven at 350°F (175°C) for 10-15 minutes or until warmed through. Enjoy the salsa fresh without reheating.
