Vanilla Bean Doughnuts

Ingredients

2 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 cup whole milk
2 large eggs
1 tablespoon vanilla bean paste
1/4 cup unsalted butter, melted
Vegetable oil, for frying
1 cup confectioners' sugar
2 tablespoons milk
1 teaspoon pure vanilla extract

Instructions

1. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and nutmeg.
2. In another bowl, beat the milk, eggs, and vanilla bean paste together until well combined.
3. Stir the wet ingredients into the dry ingredients until just combined.
4. Gently fold in the melted butter.
5. Heat oil in a deep fryer or large pot to 350°F (175°C).
6. Roll out the dough on a floured surface to 1/2-inch thickness and cut into doughnut shapes using a doughnut cutter.
7. Fry doughnuts in batches for 2-3 minutes per side, or until golden brown.
8. Remove doughnuts from the oil and drain on paper towels.
9. To make the glaze, whisk together confectioners' sugar, milk, and vanilla extract in a small bowl.
10. Dip the warm doughnuts into the glaze and let them set on a wire rack.

Storage

Store in an airtight container at room temperature for up to 2 days.

Reheating

Reheat at 350°F for 5-7 minutes or until warm.
