Ingredients

2 lbs chicken breast
1 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
1 red bell pepper, diced
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp chili powder
1 cup soy sauce
1/2 cup hoisin sauce
8 large flour tortillas
8 oz shredded Monterey Jack cheese
8 oz shredded cheddar cheese
1/2 cup fresh cilantro, chopped
1 lime, juiced
Salt and pepper to taste

Instructions

1. Preheat oven to 350°F.
2. In a skillet, heat olive oil over medium heat.
3. Add onion and garlic, sauté until translucent.
4. Stir in red bell pepper, cumin, smoked paprika, and chili powder.
5. Add chicken breasts, cooking until browned on all sides.
6. Pour in soy sauce and hoisin sauce, simmer until chicken is fully cooked and tender.
7. Shred chicken in the sauce mixture, stirring to absorb flavors.
8. Lay out tortillas, evenly distribute chicken filling, and sprinkle with a mix of cheeses and cilantro.
9. Roll up enchiladas and place in a baking dish.
10. Top with remaining cheese and bake for 20 minutes until cheese is melted and bubbly.
11. Garnish with fresh lime juice and additional cilantro before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 350°F for 10-15 minutes or until warmed through.
