Ultimate Herb-Crusted Prime Rib

Ingredients

1 prime rib roast (5 lbs)
2 tbsp olive oil
2 tbsp sea salt
1 tbsp black pepper
4 cloves garlic, minced
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
1 tbsp Dijon mustard
1 cup beef broth

Instructions

1. Preheat your oven to 450°F (232°C).
2. In a small bowl, combine olive oil, sea salt, black pepper, garlic, rosemary, thyme, and Dijon mustard to create a herb mixture.
3. Pat the prime rib roast dry with paper towels.
4. Rub the herb mixture all over the roast, ensuring an even coat.
5. Place the roast on a rack in a roasting pan and insert a meat thermometer into the thickest part of the roast.
6. Roast in the preheated oven for 15 minutes, then reduce the temperature to 325°F (163°C) and continue roasting until the thermometer reads 130°F (54°C) for medium-rare, about 1.5 to 2 hours.
7. Remove from oven and let the roast rest for 20 minutes before carving.
8. While the roast rests, heat the beef broth in a small saucepan over medium heat and serve alongside the prime rib.

Storage

Store leftover prime rib in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat slices in a preheated oven at 300°F (150°C) for about 10 minutes, or until warmed through.
