Ingredients
2 cups of ube halaya (purple yam jam)
1 cup all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
3 large eggs
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp salt
Instructions
1. Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
2. In a bowl, beat the softened butter and sugar together until creamy.
3. Add eggs one at a time, mixing well after each addition.
4. Stir in ube halaya and vanilla extract until fully incorporated.
5. Gradually add the flour, baking powder, and salt; stir until just combined.
6. Pour the batter into the prepared pan and spread evenly.
7. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted comes out clean.
8. Let cool completely before cutting into squares.
Storage
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
